iViewMediaPro can list movies and show the first frame as a thumbnail.

Movie editor is of course the registered version of QuickTime Player.

Graphicconverter (go to www.lemkesoft.de) will show images in a preview window, though it's not good, I think for editing. But it's fantastic for stills..... Very cheap and very well supported and updated.

Smile Movie Icons on a Mac

Here's a down&dirty technique that might be what you're looking for, especially if you use Quicktime as your primary movie viewer...

1: Open the movie in QT 2: Pause it at the frame you want to use 3: Under the file menu use COPY (or Apple+C) to copy the frame to the clipboard 4: Now find the File icon of the movie 5: click once on it to select it 6: The keyboard command (Apple+i) brings up an info box about the file and allows you to change the file icon. 7: In the info box you see the icon, click once to select it 8: Now paste (Apple+v) will change the icon to the frame you copied from the movie 9: close the info box cuz you are done.

It sounds complicated in writing but it's really quite quick. If you starting from a different movie player than Quicktime, say WMP then there are a few extra steps that would involve taking a screen shot but even WMVs can be opened in Quicktime these days. (Using Flip4mac)

    Hope this helps, good luck
